There's a simple but radical principle guiding Rocco Decaro's work in his Autumn Crisp vineyard in Noicattaro, at the heart of Puglia's table-grape country: nourish the soil to nourish the vine, not the other way around.
It's an approach that turns the logic of conventional viticulture on its head — a logic usually focused on acting directly on the plant through synthetic chemistry. Here the road is a different one: regenerative, organic agriculture, where the soil isn't a mere physical support but a living ecosystem to rebuild and safeguard.
A vineyard that works with microbiology, not against it
Choosing to give up synthetic chemistry and invasive tillage wasn't only an agronomic decision — it was a genuine vision. The work in the field is built on:
- Consortia of beneficial microorganisms (EM), to reactivate the soil's biological life
- Zeolites, to improve soil structure and its capacity to hold water and nutrients
- Organic matter, to rebuild natural fertility over time
The aim is to recreate a system in balance, where the plant finds everything it needs in the soil, without external forcing.
Precision technology in the service of the land

The chart below, taken from the SoilSense platform, shows this principle in action: plant-available water (top) rises sharply with each irrigation and then draws down gradually, while the volumetric water content of the soil (bottom) follows the same rhythm at two depths (20 and 40 cm). The green band marks the safe moisture range: every irrigation is calibrated to bring the soil back into that band, with nothing wasted.

Soil temperature, tracked at the same two depths, tells the same story of stability: smaller, more gradual swings than the air temperature above, the signature of a living, well-structured soil that shields the roots from climatic extremes.

Alongside the soil, the platform also keeps an eye on the microclimate above the canopy: a datalogger in the vineyard continuously records air temperature — a complementary reading that helps interpret the plant's heat stress and relate the weather to how the soil responds.
